There is a lot of fraud in the vanilla industry, so it’s important to buy vanilla from a company you can trust or make it yourself. The FDA requires that you use at least 13.35 ounces of vanilla beans in 35% alcohol for 1 gallon of vanilla extract in order to call it pure, but a lot of “pure” extracts don’t meet this requirement. We go a little beyond this to make sure we are being compliant, despite the fact that there is no government oversight in this. We do not add any additional ingredients like vanilla fragrance, sugar, synthetic substitutes like coumarin, diluents like corn syrup, questionable solvents such as propylene glycol, or harmful adulterants like mercury. These are often found in lower-quality or imitation products, and are used to cut costs and mimic true vanilla flavor. They can be found in “higher quality” vanilla extract as well.
