Put all ingredients in a large bowl and mix to combine.
Place cloth over the bowl of dough and allow to ferment for at least an hour and a half, to receive the full benefits of the sourdough.
Just before rolling out the dough, preheat your oven to 350°.
After the dough has fermented for at least an hour and a half, roll the cookie dough out on a lightly floured surface.
Cut the rolled out dough into shapes and place cutouts on a buttered baking sheet.
Put baking sheets into oven and bake for 6-12 minutes.
