Kailey tanned another hide recently (which meant buying some store eggs). She suggested that we take a picture and compare our eggs from the chickens in the hoop house to the eggs she bought. I was surprised to see that our eggs were much more yellow than the store bought eggs, despite the fact that our chickens are protected in our hoop house and not on grass at this time. The picture of the eggs before cooking doesn’t seem to contrast the difference that we saw, but the cooked egg picture was a little better.
Usually the more yellow the yolk, the more vitamins in the egg (there is a trick in the “pastured egg industry to feed marigolds to color the eggs more yellow), but usually it’s a good indication of the health of the chicken. Along with the color of the egg you can know that the Mentinks never use hormones, antibiotics, chemical fertilizers, pesticides, or herbicides in our production. If this isn’t enough, I know you will notice a difference in the flavor of our eggs compared to all eggs you find in the store, and these are just our winter eggs! We hear this all the time! I believe the difference in our eggs is the abundant sunlight our chickens receive, the good quality hay that we grind in their feed (from square bales only), the vegetable scraps they receive, and the fact that we allow our chickens a rest and don’t use artificial light or soy to increase egg production.
