I have tried a lot of different vanilla beans over the last 10 years and right now these are my favorite. Below are some uses for the beans.
1. Cut these open and add them to at least 80 proof alcohol to make vanilla extract
2. Scrape the seeds (inner part of the bean) to add vanilla flavor to many recipes. The outer pod could then be added to alcohol to make vanilla extract.
3. Dry and grind the entire pod (or outer pod) to add intense vanilla flavor . For now I put the pods in a bottle of alcohol to make what I call “waste vanilla.”

Here is my conversion chart that I use when I make homemade vanilla. This is what we have found to work well, but feel free to experiment! I like to use organic alcohol in order to avoid GMO grains that are often used in the production.
750 ml of vodka=20 to 25 vanilla beans
1 quart vodka=30 to 35 vanilla beans
1/2 gallon=45 to 50 vanilla beans
1 gallon=85 to 90 vanilla beans
How to Get More Out of Your Vanilla Beans: After your first round of homemade vanilla you have 3 options. You can simply compost the vanilla beans, use them a second time for a weaker batch of vanilla, or you could dehydrate them and grind them up to add to recipes that call for vanilla. I experimented with drying them and grinding them and have been surprised how much vanilla flavor they still impart to a recipe.
