Homemade, Flour Free, Pecan Cookies

These cookies are very simple and take less then 30 minutes to make.

Ingredients
  

  • 2 cups Raw Pecans
  • 1/4 tsp Baking Soda (Aluminum Free)
  • 1 pinch Real salt
  • 1/4 cup Butter
  • 2 tbsp Honey or Maple Syrup
  • 1/4 tsp Real Vanilla Extract

Equipment

  • Food Processor
  • Sauce Pan For browning the butter
  • 1-2 Tbsp Cookie Scoop
  • Cookie Sheet
  • Measuring Spoons

Method
 

  1. Put butter into stainless steel saucepan and melt it on medium-high heat. Continue cooking the butter until it begins to brown. Watch it very carefully to make sure it doesn't burn. Then remove from heat. Make sure that the butter is not hot before you add it to the cookie dough. If you are in a hurry you can throw the browned butter in the freezer to cool it down.
  2. Preheat oven to 350℉
  3. Put the pecans into a food processer and process until they are finely ground.
  4. Now add the rest of your dry ingredients to the food processer and pulse for a few seconds to combine.
  5. Add all of your wet ingredients to the food processer and mix until the ingredients form a dough.
  6. Butter a baking sheet.
  7. Use a 1-2 tbsp cookie scoop to scoop the cookie dough out onto the baking sheet. If you want you can flatten the balls of dough slightly, but they will flatten themselves out while they bake.
  8. Put the pan of cookies into the oven and bake for 12-15 minutes.
